A lovely layered poem.
Mark Teaford says:
As you well know, some poems require significant work before they reach final form, while others seem to spring forth, in final form, almost instantly. This poem was one of the latter. I was at a farmer's market where someone was selling baby kale and more mature kale. That prompted me to do a taste comparison, and I was struck by the lack of bitterness in the baby kale. When I first put that taste difference into words, the broader meaning of "bitterness" struck home and gave me all that I needed for the poem.
